Black Heirloom Chia

There is only one variety of chia with uniformly black seeds and it is grown in the northern highlands of Nicaragua. Here, in the mountainous departments of Jinotega and Nueva Segovia, our heirloom chia is cultivated and harvested on hillsides and valley floors.

It is a labor-intensive practice, carried out by hand with traditional and organic practices that have been passed down from generation to generation. Chia is rotated with red beans and nitrogen-fixing cover crops to promote soil health, reduce erosion, and support long-term farm management. The result is a uniquely black chia seed, grown to its optimal nutritional profile while preserving an ancient tradition.

Revered by ancient Mayans and Aztecs as a vital source of nutrition, our heirloom black chia is packed with omega-3, protein, and antioxidants.

Small Red Kidney Beans

A staple of the Mesoamerican diet for thousands of years, the Central American red bean has a silky texture and delicate creamy flavor. It's packed with protein and is a good source of fiber and minerals.

Our beans are remarkable in that they are soft but unlike other beans they retain their texture and form even after multiple reheatings. They are grown in rotation with chia by our producer partners in northern Nicaragua. Shortly after harvest, we collect the beans and transport to our facility in Matagalpa. There, we clean, sort, polish, and hand select the highest quality beans for export.

Small red kidney beans are central to the culture and food traditions of Nicaragua and many Central American countries. Along with corn, they represents the primary staple food for most rural families. Traditionally, it is used in dishes such as Sopa de Frijol (Bean Soup), Frijoles Molidos (Refried Beans) and the ubiquitous Gallo Pinto (Rice and Beans).

Cardamom Pods

Cardamom (Elettaria cardamomum) is the fruit of a tropical plant belonging to the ginger family.

Cardamom has a sweet aromatic fragrance and unique, citrusy favor. Our producer partners grow cardamom in agroforestry systems as an understory crop. It is a labor intensive crop, requiring 2 to 3 years to reach maturity. After harvesting, the cardamom pods are washed, dried and hand-sorted.

Annatto Seed

Annatto seed is a product of the annatto tree (Brixa Orellana) that is native to Nicaragua.

It is best known as a colorant for its high content of bixin, a natural red pigment. Throughout Latin America, annatto is referred to as achiote and used as a powder for culinary purposes. Annatto is a natural alternative to synthetic food coloring compounds.
